the collection of the Freisa normally takes place in the second half of September. A few days before harvesting, we collect a few baskets of grapes to create the pied de cuve, which is a fermentation starter with naturally occurring yeasts on the skins. After a maceration of about 8 days with manual pumping over and punching, it is poured into a stainless steel tank where it carries out the malolactic fermentation, is then decanted into used barriques and after a refining of one year it is bottled in the summer months without clarification or filtration.
