Dolcetto d'Alba DOC

Grape variety: Dolcetto.

Production area: Piedmont - Langhe, municipality of La Morra, Annunziata district. The vineyard is located in a sub-area called Gattera famous for the imposing cedar of centuries-old Lebanon that dominates it. The slope of the hill is gentle and the exposure is west - northwest with an altitude of about 270 m above sea level.

Yield per hectare: on average 70/75 quintals of grapes per hectare.

Bottles produced:
3.500.

Cultivation:
vertical trellised, Guyot pruning.

Wine making:
the Dolcetto collection coincides for us with the beginning of the harvest. It usually takes place in the second / third week of September (although in hot years like 2015 or 2017 it started in the first week). The grapes, harvested by hand in small airy boxes, are crushed and de-stemmed and fermented without the addition of selected yeasts. A few days before harvesting, we collect a few baskets of grapes to create the pied de cuve, which is a fermentation started with naturally occurring yeasts on the skins. The fermentation takes place keeping the mass in continuous movement to get a very intense extraction from the skins. When the fermentation temperature naturally reaches 30° degrees, we keep it at this level to prevent it from rising too much and damaging the work of the yeasts. After a short maceration of about 3 days, the Dolcetto is stored in stainless steel tanks where alcoholic fermentation ends and malolactic fermentation takes place. In winter it is stabilized with the natural cold of the outside and then bottled in the summer months without clarification or filtration.



Color:
ruby ​​red tending to purple.

Smell: fresh, vinous aroma with hints of violet, cherry, plum and blueberry.

Taste: dry, pleasantly fruity, medium-bodied, not too demanding. In the Langhe it is a very popular wine and is considered the wine of the family par excellence, for this reason it never fails on the daily tables.

 

Pairings: wine for all meals, also suitable for summer cuisine with light dishes.

Serving temperature:
17-18°C. In summer it is pleasant even at lower temperatures.

Serving suggestion:
generally it is advisable to drink it young, in the span of 2-3 years but if you happen to forget a bottle in the cellar for a few years more, it can also reserve pleasant surprises!

Alcohol content: 13-13,5% vol.
